Egg Rolls

Welcome back!

I do truly enjoy good egg rolls.

My favorite restaurant, however, uses a type of seasoning that I don’t like. So, I make some of my own egg rolls.

1 head of cabbage shredded finely
2 large cans of boneless chicken / or an equal amount of pork or shrimp that is:cooked, make sure that the meat is shredded for even distribution.
1 large can of oriental vegetables -chop finely also after draining
2 packages of egg roll wraps
soy sauce - lots of it
1 Tbsp of flour made into a loose paste to seal the wrappers

Gently saute the cabbage in a large frying pan, seasoning with soy sauce. When the cabbage is tender, add the vegetables, meat and stir.

Let the mixture cool. Lay out a cooking sheet, plastic mat, or something that will protect the counter from drippings.

On to each uncooked wrap, place approximately 2 tbsp of the mix. (The wrappers usually come with instructions on how to fold into egg rolls.) When it is almost completely rolled, use your finger and smear on some of the flour paste to seal and finish rolling. Place into a nearby pan to await being fried.

Heat a frying pan with oil/shortening until the oil/shortening is hot. There should be enough in the pan to mostly cover the egg roll. Fry each roll until it is golden brown all over. Drain, and serve.

The quantity that I told you about will make about 30 to 40 egg rolls. If you have wrappers left, they can be cut into strips and fried by themselves for chips to munch along with your egg rolls. YUM

Believe it or not, you can also make a mix using different types of cooked, seasoned fruit instead of the cabbage mix to be made into fruit rolls for desert. They can be dusted with powdered sugar for a finishing touch. STILL YUM :)

Okay, I’ve been thinking about it.

If anyone out there in internet-land has a recipe for sugarfree pecan pie, I would love to hear about it. I would really appreciate having some pecan pie and just do not want to worry about all of the calories that it might have. I guess the pie crust has enough by itself.

By the way do you have a really good recipe for pie crust? I’m hungry. :)

What are you shopping for this season?

Most times people will answer - everything and the kitchen sink- for what they are shopping and looking for.

Me, I have a kitchen sink. I would like to have a mincemeat pie, or a pecan pie. Sounds simple doesn’t it? Well…..maybe not. Both the mincemeat pie, and the pecan pie use a lot of sugar in them. Maybe I should only want just one slice of eith one. I would still have the taste in my mouth. :)

Hungry again

Did I mention that we had been traveling a lot lately?

One thing that I haven’t figured out how to control is my appetite. Driving does seem to create an appetite in me. A good appetite suppressant would help.

This day we munched on chicken strips, pimento cheese sandwich, ham sanwish, potato wedges. That was nice and tasty. Got home, slept (we were rather tired after all), now got up and want something to eat. What else is new? :)

Potted Meat?

You know about potted meat don’t you? I know that I do. I used to eat that stuff when I was younger and they did not make it with so much grease and preservatives.

Now I no longer eat that stuff, I value my stomach. Now when I want to eat something similar, I make it myself.

I take one can of Vienna sausages (any brand) shredded by fork to make them crumbly
1 Tbs pimento
1/2 c shredded cheese
2 Tbs Miracle Whip

I blend it all together and voila - meat spread.

Of course if you want, you can vary it by using less of the salad dressing, more pimentos, more cheese - what ever.

It is nice to have alternatives for everyday living isn’t it? :)

Diets again

Every time that I open up my e-mail, I keep hearing about the best diet pills that each site has available.

I have no idea just how many types are out there, or which one do actually work. All I know is that I like to eat. I truly enjoy food and in a lot of different varieties and tastes. I keep hearing about diet and exercise. I wish that there was an alternative for the exercise.

Some of my favorite foods like tomatoes are low calorie. Some of my other favorites and high calorie like pizza. It is very frustrating in trying to find a good balance.

What’s for lunch?

I am sitting here trying to make up my mind about what to fix for our next meal.

Peppers and onions, and sausages? Or, how about some stuffed green peppers. Of course when I make stuffed peppers, I cheat and dice up the peppers and really make it into a meatloaf that is easier to portion out and bake. It sure is handy.

Of course, I could also make old fashioned hamburgers with thick slices of tomato and some slices of polish dill pickles.

Wither way, I’M HUNGRY! ‘Nuff said. :)

Tomatoes, yum

Yes, I do enjoy tomatoes.

Juicy, fresh, tasty, and filled with vitamins. I enjoy tomatoes. Sliced, diced, sauteed, in sandwiches. Almost any way they can be fixed. When they are green, well that is another matter.

Sliced, battered and deep fried makes them even more YUM. It might sound simplistic, but oh so tasty. :)

I’m hungry

Yes, with a title like I have for my blog, I am hungry. Right now, I have a pot on the stove with green pepper (fresh) cooked into BBQ sauce and with Polish sausages cut up into it. I have been waiting for my husband to wake up, and then we can both eat. Yum.

Of course, this is not diet food, and it is not like I will take some diet pill before eating. I am still hungry and have not yet figured out what else to eat. After all just sausages alone do not make a meal. Fries would go good with the meat and sauce, so would a salad, or some other veggies. I think that the fries will win, however. Looking forward to lunch. :)

Hey, that is for the other cat !

Yes, I have said that many times. Sometimes, pets can be just like kids in that they do not want to share toys, plates, people, pillows…..the list goes on.

Just yesterday, I found myself saying the title phrase to our youngest cat. She is 3, the older (much smaller) cat is 6, and very jealous. Well, I had put out some food for the both of them and found one eating some from both sides. I guess she was putting her mark on both. The other cat was asleep and didn’t see this happening.

With cats, dogs, what ever type of pet, you have some of the same kinks that can be found with siblings, but charges for going to college, though. At times, it can be hilarious.
